Fricassee

Culinary definition of fricassee A method of cooking, or braising, most often associated with chicken and small game like rabbit. Cut pieces are dredged in flour, browned in fat, and then covered in liquid and cooked in a dutch oven or skillet - with or without the addition of vegetables.
