Fumet

Culinary definition of fumet (fyoo-may) A concentrated stock, sauce or liquor used as a base.

fumet in stainless dish 325x225We love fumets.  Reduced, or concentrated stock, juice, wine etc., can be frozen or refrigerated for long periods of time and are fantastic time and money savers.

Six coming for dinner with no notice?  No problem, use fumet, yesterday's left-over wine and a cube or two of cold butter to make a gorgeous and sophisticated sauce for grilled meat or fish.  Concentrated brown stock/fumet (made with oven-roasted bones) or veal stock/fumet (above) are both packed with flavour.
