Knead

Culinary definition of knead:  A pattern of 'working' bread or pizza dough on a board - rythmic pushing down and forward, folding and repeating until desired consistency.

kneading bread dough push away 325x225Once you get the hang of it you will never forget, but if you are a kneading virgin, here is a simple crash course:  Place your rounded mound of dough on a 'lightly' floured surface, in front of you, at waist height if possible as that's most comfortable. 

Hold the dough down gently (so it doesn't move away from you as you knead) with one open hand at the side/front edge of the dough (edge closest to you) and then use your other hand to press down rather firmly in the centre, and push  (up) - stretching it away (by a full dough length or so), finishing with the heels of both hands. 

kneading bread dough pull back 325x225Fold the dough back on itself, spin it one-quarter turn and continue like this for 8-10 minutes or until smooth and springy (elastic) enough to pop back up when poked with a finger.  

Sprinkle a light dusting of flour only if needed, as you go.
